L\u2019Alsace est une r\u00e9gion d\u2019odeurs et de gouts, c\u2019est un paysage qui se d\u00e9guste et o\u00f9 la gastronomie tient une place pr\u00e9pond\u00e9rante: organiser mon projet autour de la p\u00e2tisserie supposait de le rattacher \u00e0 la notion de partage et de g\u00e9n\u00e9rosit\u00e9 et \u00e0 la transmission du savoir. Le kouglof est la p\u00e2tisserie la plus repr\u00e9sentative de l’Alsace.<\/p><\/div><\/div><\/article>\n\n\n\n

Le kouglof est une p\u00e2tisserie ronde et g\u00e9n\u00e9reuse qui, avec le streussel se d\u00e9guste toute l\u2019ann\u00e9e, alors que d\u2019autres suivent un calendrier pr\u00e9cis. Les bredeles se mangent \u00e0 l\u2019avant, les manneles \u00e0 la Saint Nicolas et le pain d\u2019\u00e9pices \u00e0 No\u00ebl. Choisir le kouglof comme p\u00e2tisserie embl\u00e9matique de mon lieu r\u00e9pond \u00e0 des imp\u00e9ratifs \u00e9conomiques .<\/p><\/div><\/div><\/article>\n\n\n\n

* stub : selon les traditions m\u00e9di\u00e9vales, la stub \u00e9tait la seule pi\u00e8ce chauff\u00e9e en hiver. Aujourd\u2019hui la stub s\u2019apparente \u00e0 une annexe de la salle \u00e0 manger, au repas dans l\u2019intimit\u00e9 avec un banc de coin.

Je suis alors partie de deux postulats le premier: il existe deux espaces indispensables dans l\u2019art du bien manger alsacien la cuisine et la stub toujours contigu\u00eb \u00e0 la cuisine. Il fallait donc absolument conserv\u00e9 ces deux espaces adjacents, comme un marqueur d\u2019identit\u00e9. Une troisi\u00e8me particularit\u00e9 s\u2019est rajout\u00e9 le kacholofe, toujours pr\u00e9sent dans l\u2019un de ces deux espaces. Le deuxi\u00e8me postulat est un contrainte technique: je voulais impos\u00e9 un parcours semblable \u00e0 celui de la nourriture qui est celui de la marche en avant ou il n\u2019y a pas de retours possible en terme de circulation et d\u2019activit\u00e9, une fois entr\u00e9 dans les lieux. \u00c0 savoir, mise en tablier dans les vestiaires, choix de la recette, passage au garde manger, confection en cuisine, puis d\u00e9gustation dans l\u2019espace collation.\n<\/figcaption>\n <\/article>\n\n\n

Je me suis attach\u00e9e \u00e0 la capacit\u00e9 d\u2019expression des mati\u00e8res, des couleurs, des formes, en soignant les d\u00e9tails pour qu\u2019ils expriment des qualit\u00e9s et des \u00e9motions dont se revendiquent les alsaciens: g\u00e9n\u00e9rosit\u00e9, gait\u00e9, savoir faire, chaleur, convivialit\u00e9. J\u2019ai \u00e9galement voulu inscrire son lieu dans son \u00e9poque d’o\u00f9 l’aspect plus moderne.<\/p><\/div><\/div><\/article>\n\n\n\n

Faut -il que ce soit beau ?
L\u2019architecture contemporaine peut elle vraiment \u00eatre une conversation respectueuse entre le pass\u00e9 et l\u2019avenir ?<\/p><\/div><\/div><\/article>\n\n\n

The renovation of an emblematic Strasbourg caf\u00e9 allows this traditional recipe to be reinterpreted in a dedicated culinary workshop. Two influences meet and confront one other: Alsatian tradition, deeply rooted in the local art of living, blends with more modern architectural elements to create a new hybrid place.
