Sustainable food should be an issue of central concern to us all.Our health, our access to food and our environmental impact are all directly linked to it. Supermarkets are situated at the intersection of our food chain and our consumer practices. Between the globalised macro-scale of our products and the micro-scale of our housing, they represent a middle ground between the food industry and we, the consumer.Through a theoretical analysis and investigations in the field, this dissertation aims to explore the future of the supermarket, by examining current food production and distribution models, which are incompatible with the ecological and social transition.
